Green beans are used in Ayurvedic medicine to treat cardiac disease, bladder disease, acne, dropsy, dysentery and hiccups. It has also proven to reduce the risk of heart ailments. The vegetable also slows the rate of digestion of starch and absorption of glucose thus helping regulate blood glucose levels.
NOTABLE FACTS
Beans have been central to the development of civilization in a wide variety of ways – from being a critical source of protein to being cattle feed. Ancient Egyptians, long before King Tut, grew beans on a large scale. Green beans and other beans, such are kidney beans, navy beans and black beans are all known scientifically as Phaseolus vulgaris. They are all referred to as “common beans,” probably owing to the fact that they all derived from a common bean ancestor that originated in Peru.
TRY-ME RECIPES
Try your hand at preparing a yummy, healthy serving of Green Beans with Coconut. Start by heating the oil in a pan under medium heat. Add the mustard seeds and dhal. Fry till the dhal turns golden brown. Add the onions, curry leaves and red chilli.
Fry till the onions are translucent. Next add the green beans and fry for a few minutes. Add the coconut and salt. Remove from fire and you’re ready to serve!
